The Haliburton Post House stands as a testament to perseverance, community, and excellence.

Founded by Joel Baker in 2021, this boutique resort and retreat center has rapidly become a beacon of hospitality and fine dining in the region, despite its challenging beginnings during the COVID-19 pandemic.

A Dream Realized

Joel Baker, CEO of The Haliburton Post House, recalls his initial encounter with the property over two decades ago. “When I first saw the Post House over 20 years ago after we got married during the visit I was in awe and fell in love with it, never imagining that one day we’d be fortunate enough to own it,” Joel reminisces. This love for the location led Joel and his wife, Heather Milstein, to purchase and renovate the property starting in 2018, opening their doors in the midst of the pandemic in 2021.

Heather, Managing Director of the Post House, shares her lifelong connection to the area. “It’s just an absolutely beautiful location and has been an area I’ve been enjoying since my teenage years,” she says. This deep-rooted affection for the Highlands played a significant role in their decision to invest in the property and the community.

A Vision of Excellence

From the outset, Joel and Heather had a clear vision for The Haliburton Post House. “Our vision was to create a first-class venue for corporate and board retreats as well as for families and celebrations with fine dining and exceptional service,” Joel explains. This vision has guided every aspect of their operations, from the renovation of the property to the exceptional culinary offerings provided by their husband-and-wife culinary team, Executive Chef Dan Sanders and Chef de Cuisine Amber Husband.

Despite the challenges posed by the pandemic, the business began its journey with a “gourmet-to-go” service, offering meal kits to the local community. This initial step allowed them to establish connections with local suppliers and refine their culinary offerings. “It gave the chefs an opportunity also to experiment with all sorts of different menus and to meet many local providers,” Heather notes.

A Commitment to Community and Sustainability

The Haliburton Post House is not just a retreat center; it is an integral part of the local community. Joel and Heather have established numerous partnerships with local businesses and organizations, including Haliburton Forest, Yours Outdoors, Fleming College, and many local farmers and suppliers.

“Our chefs are dedicated to supporting local farmers and businesses,” Joel highlights, “notably Killara Station, Snaffle and Mane Plants and Floral, Cranberry Lake Farm, McFadden’s Meat Market, EAT Cheeserie + Cocktails, and the Haliburton Farmers’ Market.” These partnerships not only ensure the freshest and highest-quality ingredients but also strengthen the local economy and promote sustainable practices.

In addition to their community involvement, The Haliburton Post House is committed to sustainability. They have implemented numerous environmentally friendly practices, such as eliminating single-use plastics, using non-motorized watercraft, and installing high-efficiency heat pumps. “We were also rewarded with the coveted Feast On designation by the Culinary Tourism Alliance of Ontario due to our commitment to Ontario produce,” Heather proudly states.

Looking Ahead

As they look to the future, Joel and Heather are focused on further establishing The Haliburton Post House as one of Ontario’s premier boutique resorts. “Our goal would be to be one of the best boutique resorts in Ontario for corporate retreats, for weddings, family reunions, or folks just wanting to come and enjoy the lakeside cottage experience,” Heather says. They aim to continue providing exceptional service and unforgettable experiences to their guests while remaining deeply rooted in the community.

Their commitment to the local community is evident in their actions. Last winter, they hosted a Friends and Family Night to thank their local partners and supporters. “It was a joy to do because they’ve been kind to us,” Heather reflects.
