Step back in time to Sicily over 1,000 years ago in the Trapani region, where Busiate pasta was first crafted. Like all traditional southern Italian shapes, Busiate is made with just three simple ingredients: hard wheat flour, water, and a little love of course!
In this hands-on workshop, you’ll learn to create this iconic spiral pasta and pair it with Pesto alla Trapanese – a fresh, tomato-based pesto developed specifically to be paired with this shape. As you work, we’ll explore the rich history of the region and the diversity of Italian food traditions as Daniela shares her intimate knowledge of the regions of Italy.
In this workshop, you will:
• Enjoy Daniela’s locally famous slow-roasted Cherry Tomato & Garlic Confit with her signature house focaccia
• Experience a guided tasting menu of wine pairings provided by Fielding Estate Winery
• Make your own traditional southern Italian pasta dough
• Learn to shape Busiate using a ferretto (a classic pasta tool)
• Watch how to prepare authentic Pesto alla Trapanese
• Sit down to ‘mangia con i tuoi amici’ your Busiate alla Trapanese made with your own hand formed pasta
• Take home a curated “loot bag” including a ferretto tool, specialty flour, and recipes
• This pasta experience is limited to 14 participants and dinner includes salad and dessert

As we move along an easy outdoor route, participants will pause at several stops to learn about tree biology, how different species contribute to ecosystems, and the ways trees have shaped the making of books and storytelling traditions.
The walk is informal and discussion-based, with space for questions and shared reflections throughout.
